Crispy BBQ Chicken Nuggets

Ok, so the inspiration for tonight’s dinner came from 2 locations. First Kraft! I get a lot of ideas from the website and the back of their boxes.  The other inspiration is from “Deceptively Delicious”. Where I learned a lot of secrets for “hiding” my veggies, because face it, even grown men won’t eat their veggies. LOL

Recipe:

2 pounds Boneless Skinless Chicken parts of choice (I like breast, thighs or the super easy tenderloins.)

1/3 cup  pureed cooked carrots (You can puree canned carrots as well, just omit half the water they are packed with)

1/3 cup  BBQ Sauce of choice (The more flavor the better, I like Sweet Baby Ray’s)

3 1/2 – 4 cups bread crumbs and gallon ziploc OR 1 box extra crispy shake and bake

Mix Carrots and BBQ Sauce together in bowl, set aside. Cut up chicken to about 1 inch square pieces, they don’t have to be perfect. Put cut up chicken in the bowl with the sauce and mix well, so that all chicken is coated.  Put pieces in the bag (either shake and bake bag or ziploc) with the crumbs. I would recommend only 4 or 5 pieces at a time in the bag. Give a quick shake and put on a baking sheet (or right into a hot fry pan). You don’t want the chicken to be heavily coated, just a light crust. You can bake them in the oven at 350 for about 15 – 20 minutes or on the stove on Med-High for about 3 minutes a side.  They should cook up pretty quick on the stove.  If you want a more “Grill” flavor, omit crumbs and cook on the stove, with a good pan searing at the end.

    For those interested, dinner was a SUCCESS! Josh loved it and Jeremy was surprised that there were carrots in it. He said he couldn’t taste them at all! Woohoo!
